Southern Keto Coleslaw

Coleslaw is a very important side dish, especially in the South. And the preference of either the vinegar or mayonnaise based versions has divided many houses. My coleslaw is a combination of the two. It's creamy, but not drowning in mayonnaise, and tangy, but not overpowered by the vinegar. For the very best flavor, I make it a few hours early so the flavor really sets in.

Ingredients

  • 16 oz bag of shredded cabbage* or buy whole head and shred it yourself
  • 6 tbsp mayonnaise (Duke's Mayo if you can find it, y'all)
  • 1-3 tbsp coconut vinegar or any carb free, vinegar (I use 2 tbsp + 1 tsp, but start small and add to taste, remember: it's really easy to overdo the vinegar)
  • 2.5 tbsp powdered erythritol
  • 1/2 tsp sea salt Himalayan sea salt is best
  • 1/2 tsp ground black pepper

Instructions

  • In a mixing bowl, combine everything except the cabbage, mix well.
  • Add the cabbage and mix until it's well coated. It won't look like enough liquid, but trust me on this, it's plenty. Let sit for at least 15 minutes.

  • Leftovers can be covered and refrigerated for about 3 days.

Chef's Notes

  • This is a highly customizable recipe - add or subtract any of the non-cabbage ingredients to your specific taste.
  • Start small with the vinegar (and possibly salt), it can very easily get too strong with even one extra measure.
  • If you have time, put this together at least a half hour in advance to let the flavor really set in. After mixing, just cover and refrigerate.
  • If you subtract sugar alcohols (6g) from total carbs (9g), nets carbs = 3g per serving.
  • This side dish goes very well with a delicious protein and a roasted vegetable side.

*Many of these bags of pre-shredded cabbage come with other vegetables like carrots and onions. Get it without these additions. If you can't find it as just cabbage, get a whole head of cabbage and slice it up yourself to get the amount you need (it would be somewhere around a third to a half of a head, depending on the size of the cabbage).
